Why don’t you start selling them?’ Doris Montoya’s hands move quickly and surely as she rolls out a ball of cookie dough and stamps out small scalloped rounds. She could probably make alfajores, cookie sandwiches filled with creamy dulce de leche, with her eyes closed. “For me, it’s like therapy,” she says. It’s also a budding little business. Montoya, 53, is the “Doris” of Doris’ Peruvian Pastries, whose customers keep clamoring for her alfajores, rosquitas, orejitas, and cocadas.

Look for Doris’ pastries at the Wayland Farmers’ Market starting in January.
