She could probably make alfajores, cookie sandwiches filled with creamy dulce de leche, with her eyes closed. “For me, it’s like therapy,” she says. It’s also a budding little business. Montoya, 53, is the “Doris” of Doris’ Peruvian Pastries, whose customers keep clamoring for her alfajores, rosquitas, orejitas, and cocadas.

Look for Doris’ pastries at the Wayland Farmers’ Market starting in January.
